Does this look like green tea to you? It is! Houjicha is a specially roasted green tea which is one of the many commonly enjoyed green teas Japan is famous for.
The leaf comes from 3rd flush bancha, which is means it is harvested from sun grown tea plant later in the season, after the first and second flushes of tea. Similar to Japanese Sencha, the leaf is plucked, steamed and dried. To create this very special toasty tea, however, the dried leaf is then roasted over a low heat. The low roasting temperature creates a toasty sweetness and a nice fresh aroma, and transforming its colour to a reddish-brown. You may still detect umami undertones of steamed japanese green tea, but re-invented with new nutty, earthy and toasty flavours with hints of caramel or even a slight cinnamon note.
The roasted flavour of hojicha is sometimes compared to coffee, making it a nice entry tea for those making the switch. Its also an ideal breakfast tea alternate to traditional indian blacks. Try pairing houjicha with Asian themed meals and notice how well it cleanses the palate. This is truly a refreshing tea that is as good hot as it is poured over ice!
